Every mom dreams of having an easy meal to just pull out and hand to the kids. Trust me, I know this because its literally the story of my fucking life. One of my personal faves is Egg Salad. It’s beyond easy, can be made in a big enough batches that you can use it more than one day in a week, you can change it and ad or remove things based on your own taste. I can’t find a way to go wrong with this (unless of course you have an egg allergy). This is literally the SIMPLEST Recipe I have. Have at it kids 😉
- 6 Hardboiled Eggs
- 2 Celery stocks
- Peel and dice Hard boiled eggs sliding into a bowl (I like to use Tupperware so that it can be sealed and put in the fridge for later)
- Chop Celery stocks.
- Add mustard, mayo, and salt to taste.
- Mix All ingredients until combined. Enjoy!
